It’s always a strange thing celebrating Easter in Australia, well any holiday for that matter, when everything associated with that holiday is so wholly at odds with the weather. While I love an adorable little hatching chicken, or bouquet of yellow spring flowers as much as the next girl, they are a bit in short supply here at the moment. Instead I’m scratching around trying to remember where I stashed my ugh boots at the end of last winter, and trying to convince RobbieD that 20 degrees celsius really is cold enough to justify running the heater all night long (or sneakily turning it off before he comes into the room. I wish that our heater had a ‘boss’ key).
Easter always reminds me of freshly baked scones, the weather is just cooling down enough here, I can remember my mum making them, as people always seemed to just ‘pop around for an afternoon cup of tea’ at this time of year. If we were particularly lucky she would have prepped another batch for us, and put them in to bake to be ready for my sister and I as soon as we walked in the door from school.
Seeing as ANZAC Day fell on the Easter weekend this year, it seemed only fitting to make pumpkin rosemary scones.
